Aubergine Parmigiana

  • for 6 people
  • 4 aubergines
  • 500 grams of AGROMONTE ready to use Cherry Tomato and Basil Pasta Sauce
  • 200 grams of caciocavallo cheese
  • 80 grams of grated parmesan
  • Extra virgin olive oil (EVO)
  • Salt

1. Wash the aubergines. Slice them and add some salt.

2. In a pan heat 2 or 3 lugs of EVO and fry the aubergines.

3. Spoon some AGROMONTE ready to use Cherry Tomato and Basil Pasta Sauce into the backing tray. Then cover with the aubergines. Drizzle over some more sauce, grated caciocavallo and parmesan. Repeat until you finish the ingredients.

4.Cook in a pre heated oven (200°c) for 15 minutes.
