1. Slice the aubergines and fry them in 3/4 spoons of boiling oil.
2. In the meantime add a splash of EVO in a pan and lightly fry the 2 anchovy filets. Add the bread crumbs and leave to golden for a couple of minutes.
3. Turn off the flame and add the AGROMONTE ready to use Cherry Tomato and Basil Pasta Sauce, the parmesan and the pine nuts. Mix everything.
4. In the middle of each slice of aubergine add a bit of the mixture and roll them up.
5. Cook in a pre heated oven (180°c) for 20 minutes
